One of the ways we live frugally and make sure we live within our means even with a bigger house payment and college costs is to limit going out to eat. Sure, we will enjoy a meal out for a special occasion, but for the most part, I cook everything we eat from scratch.
That doesn't mean I don't get cravings for takeout. My weakness is Chinese food. Over the years, I've tweaked some recipes and came up with some creations that hit the spot. I thought I'd share a few of them with you today. Let's start with a simple beef & broccoli dish.
- 2 tablespoons vegetable oil
- 2 pounds lean beef stew meat
- 2 to 4 tablespoons minced garlic
- 1 large onion, chopped
- 3 cups beef broth
- 1/4 cup soy sauce
- 2 pounds frozen broccoli
First heat your oil in a large pot, or iron chicken fryer. Add the beef, garlic and onion. Stir fry the meat and vegetables until the meat browns, and the vegetables are tender and fragrant.
Add the beef broth and soy sauce to the pot. Cover the dish and simmer for an hour, or until the beef is tender.
Add the frozen broccoli. Cover the dish again and simmer for 10 more minutes, or until the broccoli is done to taste.
Serve hot over lots of rice.
I had so much fun with the iced beverages last week, I had to come up with one more. It has a bit of a backstory. My daughter loves Earl Grey tea. A few years ago I came across a recipe for London Fog - a hot, sweet earl grey latte. She was craving the same flavors but in an iced drink this week, so we started playing around with ingredients. I told you last week I was working on a little something special. It's something I've gotten a lot of requests about over the years. I finally figured out a way to do it - Create printed cookbooks at an affordable price.
I played with the last one - The Frugal Potluck Cookbook first. There was quite a bit of trial and error, but it's finally ready and I have the first physical copy in my hands.

P.S.: I'm working on preparing the next few Kindle Cookbooks for print editions. It involves ordering new graphics that will wrap around the front, spine, and back. This means it will take a little while before I get them back, and I can only afford to do a few at a time. All that to say I'm doing what I can, but it will take some time to get the entire catalog converted.
