I picked up an inexpensive dehydrator at Walmart last week and have enjoyed using it to dehydrate all sorts of fruits and vegetables.
Some are for fun and to create healthier alternatives to other foods we like - dehydrating zucchini and yellow squash to eat as chips instead of potato chips. Or dehydrating strawberries to add to homemade granola.
The main reason I bought the dehydrator was to be able to preserve food that would otherwise go bad. We had a lot of apples that weren't getting eaten, which is why I went ahead and bought it. I'd been wanting one for the past year or two, but never had enough counter-space to set it up and run it. With the new house there's ample space and the new dehydrator even has a dedicated spot in the garage to run so it doesn't heat up the rest of the
house.
Last but not least, with food prices rising, I've been experimenting with things like carrots and celery. cherries, and a few other pieces of produce. The idea here is to buy them when they are on sale and use them throughout the winter. We try to eat as much as we can in season, but it's nice to be able to extend that window by preserving some of the food I buy.
