If you've been to the grocery store lately, you've noticed that prices are going up, especially for meat. Even ground beef is no longer a bargain.
I've gotten a few questions lately about adjusting our grocery budgets and frugal ways to make meals stretch. There is a lot you can do without meat, but that's a topic for another day.
Today, I thought we'd chat a little bit about chicken. Yes, a bag of fresh or frozen boneless, skinless chicken beast has gotten pretty expensive, but it's still more frugal than beef for example, and you can do even better by using whole chicken or leg quarters.
Look for any sales and stock up when they come up. I like buying whole chickens, cooking them, and using the meat in a variety of different dishes. I'll share my favorite way to cook these whole chickens below, but you can also boil it, or throw it into the crockpot until done.
The enchilada recipe below is a great example of how you can use up some of the cooked chicken meat. It doesn't take a lot of chicken to make a filling meal.
