Time is flying and we're already well into fall. Halloween is just around the corner and you know what that means. Thanksgiving and Christmas will be here before you know it.
It's also finally cool enough down here in the south to get me in the mood to bake. While there are many pies and even a few cookies that don't require baking, it just isn't the same as pulling a sweet and gooey baked treat fresh from the oven.

Keeping with the pie theme, I thought I'd share a couple of my favorite pie recipes from the Hillbilly Housewife site with you. Let's start with a family favorite - a chocolate pie with a meringue topping. I don't make it very often. I'm not sure why. It's not that hard to make, but with the egg white, it feels like a more involved recipe that I only pull out for the holidays.

It's a delicious pie and the recipe actually makes two of them. Enjoy one yourself and take the extra over to a friend. Or eat them both. I won't judge. This is also great to make for bake sales. It's always a big seller for me. Just make sure you sell the whole pie at once. This doesn't work well in a "sell-by-the-slice" situation. It also looks very pretty wrapped in cellophane with that topping. Make sure you label it though and let folks know that it's
chocolate pie. You may also want to mention this when you take it somewhere or serve it to guests. You don't want to disappoint anyone who thinks it's a lemon meringue pie.
Next, I want to share not one, but two apple pie recipes with you. Both are pretty easy to make and it's hard to pick a favorite. The first includes a yummy crumb topping, while the second recipe is a more traditional double pie crust apple pie.

Which one will you try first? If you make them both, I would love to hear which one you like better. I change my mind all the time, but as of today, the crumb topping one is my favorite.
While you can certainly use store-bought pie crusts for these (and I do from time to time), it is surprisingly easy to make your own once you get the hang of it. Here are my best tips for making your own pie crusts:
