It's April 1st - April Fools Day. I just got my daughter off to school with a firm reminder not to fall for anything today. Thankfully, she's a smart cookie. I'm not a big fan of pranks for the most part, but one thing I've enjoyed doing is coming up with something fun and quirky for dinner on April Fools Day. We have a family tradition of having something for dinner that isn't quite what it looks like.
My favorite has always been a meat loaf and mashed potato cake. You bake meatloaf in two round cake pans and then use mashed potatoes as frosting to create a two layer cake. Top with a few cherry tomatoes and you have something that looks like a fancy cake, but is in fact dinner.
