Hi there and welcome to the next edition of the HBHW newsletter.  After a week of what seemed like non-stop rain, the sun is out today and I can't wait to head outside for a walk. It's warming up quickly and still a bit damp outside, but I am ready to get out of the house for a bit no matter what today. 

I promised myself to get this week's newsletter out to you first though. I don't have a lot of family tales to tell. We've mostly just hung out around here, playing board games, watching movies and snuggling on the couch over the weekend. The school week so far has been busy with meetings, clubs and after-school activities getting started for the new year. I am already looking forward to the weekend. 

Let's get into this week's issue. I have a new article, a new recipe and a new frugal tip to share with you this week. The "I'm looking for request" is a re-run of a request from a few months ago. I've run out of new requests. If you have a recipe you're looking for, email me at susanne@hillbillyhousewife.com and I'd be glad to feature it and give you my own input. HBHW readers are an amazing resource when it comes to lost recipes as well.

Buttermilk Waffles

I'm Looking For



I’m looking for a good waffle recipe that uses buttermilk and maybe oil. I have several , but no really good recipe. Any tips for making great homemade waffles would also be appreciated.
Oh, and if you have a yeast waffle recipe, I’d be interested in that as well.

Featured Recipe of the Week

Tomato & Sweet Potato Soup

From the Freezer Soup and Stew Kindle Cookbook

• 1/4 C olive oil
• 2 onions, chopped
• 2 sweet potatoes cut into chunks
• 6 C of chicken broth
• 2 tomatoes, chopped
• 1/4 t white pepper
• 1/4 C orange juice
• 1 1/2 C of water

Place the oil into a Dutch oven over medium heat. Add the onion and cook 4 minutes, stirring often. Add in the sweet potatoes.

Stir the chicken broth into the mixture. Bring the broth to a quick boil.
Reduce the heat to low, cover and cook 25 minutes.

Remove the pan from the heat and stir in the tomatoes.
Blend in the white pepper.

Pour the mixture into the blender and puree until smooth.
Transfer the mixture back to the Dutch oven.

Pour the orange juice and water into the pan and blend well.
Cook the soup on the low setting for 15 minutes or until heated through.

Makes 6 servings

To reheat frozen soup, place the soup in the refrigerator to thaw completely. Pour the soup in the Dutch oven and place over low heat. Cover and stirring often cook the soup approximately 20 minutes or until as hot as you like.

    Replacing Cream Of Tartar in Recipes


    Cream of tartar isn’t something I usually keep around. There are only a few recipes that need it and without fail, I’ll have everything else in the house when I’m getting ready to make something that calls for it. It’s great for stiffening egg whites and also called for as a leavening agent in some baked goods.

    Since getting a little jar of the powder doesn’t warrant a trip to the store, I’ve been looking for alternatives to use. Thankfully it is easily replaced with common household items. Here’s what do do when you find yourself in the same predicament and need to replace the cream of tartar in a recipe.



    Cream of Tartar Substitute


    Stiffening Egg Whites
    While cream of tartar is your best choice for stiffening egg whites, white vinegar or lemon juice do the trick almost as well. Add 1/4 tsp of either liquid per egg white and beat until stiff peaks form. I have not noticed a change in flavor due to the vinegar or lemon juice.

    In Baked Goods
    Recipes for baked goods sometimes call for both baking soda and cream of tartar as leavening agents. You can use  a full tsp of baking powder to replace 1/3 tsp baking soda and 2/3 tsp cream of tartar. Bake as usual.

    Avoiding Afterschool Frustrations – Homework, Housework and Happiness



    The start of a new school year is always a time of adjustments for us. It takes a few weeks to get back into the groove of a regular routine. There are new after-school activities, appointments and the likes. This year, since we switched schools, the drop off and pickup times are a little different too.

    Add to that the fact that during the summer months our usual household routine goes out the window and we fly by the seat of our pants, and it’s no wonder that it takes a little while to find a new working routine. I can’t stress enough how much a regular after school routine helps things run smoothly. Homework is done in time, tests are studied for, there are clean clothes to wear in the morning and dinner goes on the table at a set time each night. Even just a little bit of structure and routine helps us stay on track and makes us a happier more relaxed family.

    Make A Schedule
    One of the hardest things for us when it comes to both homework and housework is just getting started and figuring out what we should be working on. Having a set schedule has been helping with that. After picking my daughter up from school we know exactly what we need to do. There’s time for a snack, kitchen cleanup, dinner prep, homework and other daily chores. We don’t waste a lot of time figuring out what needs to be done, which leaves more time for fun family activities.

    Divide and Conquer
    Something I struggled with for a long time was to realize that I didn’t have to do everything around the house. Dividing up chores and having everyone in the family chip in has made a big difference for us. We get done much faster and doing things around the house is good for the kids. Not only do they learn important life skills, it also teaches responsibility and perseverance.
    Look at what needs to be done each week to keep the house in order. Divide up the tasks, keeping in mind that the kids also need time for homework, study, after-school activities and some time to play and relax.

    Prepare For The Next Day
    The secret to things running smoothly in the morning is to prepare the night before. I’m sure this is no big revelation to you. But are you doing it consistently? Have the kids pack their book bags and pick out clothes as soon as they are done with homework. Prepare as much of the lunches as you can the night before. Know what you need to wrap up the next morning and write it down. I don’t know about you, but my brain isn’t working at 100% until my second cup of coffee and I need all the reminders and help I can get.
