Hi there and welcome to the next edition of the HBHW newsletter. We've been busy with plenty of after-school activities around here. Last night we got to listen to to our daughter perform with her middle school chorus. It was a wonderful concert and it's amazing how many different songs they've earned and how much they've improved since the beginning of the school year.

The rest of our week will be filled with Halloween parties and I'm hoping to check out a hand spinners group that meets at my local library once a month. 

In today's newsletter, you'll find a yummy chicken recipe, a great tip for making your own pumpkin puree and in the article, I share some of my favorite pumpkin recipes - perfect for Fall. 

There's also a new "I"m Looking for Request" take a look and see if you can help out a fellow HBHW readers.

I'm Looking For



I had a recipe that was published in the old FEDCO magazine. It was way back in the 80’s some time. It was a delicious marinara sauce and spinach, egg & mozzarella filling. I used this recipe so much and it disappeared in a move at some point.

If any reader has it…none of the ones I’ve found on the internet have been quite the same.

Oven Barbecue Chicken

  • 3 pounds chicken legs &/OR thighs, 
  • 1 cup prepared BBQ sauce 

In a plastic Ziploc bag, or shallow bowl combine the chicken and prepared BBQ sauce. Marinate the chicken in the sauce for several hours or overnight. Turn the chicken or the bag every now and then so that it soaks up the marinade evenly.

When you are ready to cook the chicken, pour the contents of the bag into a 9 by 13 inch baking dish. Add a little more BBQ sauce if you think you need it. Cover the pan with tin foil. Bake at 350 degrees for an hour. Remove the foil, and continue baking for half an hour. The chicken is now done. Serve with coleslaw, canned pineapple and homemade biscuits. It's also good over cooked rice.

    How To Freeze Pumpkin


    Each year 1.5 billion pounds of pumpkin are grown. Sadly a lot of that ends up in local landfills and compost piles after Halloween. Why not change that this year by roasting and freezing the pumpkin to make some delicious pumpkin soup or pumpkin pie later on?

    Plan Ahead

    If you’re thinking of cooking and freezing your pumpkin, consider either using the pumpkin as a decoration as is or painting it. It’ll last longer than if you don’t cut it. If you do turn it into a Jack O’ Lantern, cook it as soon as possible.

    Roast Your Pumpkin

    Next you want to cook the pumpkin and turn it into puree. The easiest way to do it is to roast the pumpkin. Allow the pumpkin to cool enough to handle, then puree the cooked pumpkin flesh. You can add some seasonings if you’d like, but I prefer to keep it plain and add either sweet or savory seasonings once I’ve decided what to make with each batch.

    Freeze The Cooked Pumpkin

    Of course you’re welcome to use the cooked pumpkin right away. It makes for delicious soup, can be used instead of canned pumpkin in pies or any other recipe for that matter. If you’re not in the mood to make something with it right away, you can easily freeze the pumpkin. Here’s how.

    Once the pumpkin puree has cooled, divide it into 1.5 cup servings. Put them into freezer bags or freezer-safe containers and freeze them for up to a year. Thaw the puree and use it in place of a can of plain pumpkin.

    15 Pumpkin Recipes You’ve Gotta Try This Fall


    It’s almost Halloween and Fall is making an appearance all the way down here in the south. The leaves are turning, the air is getting crisp and I’m digging out my handknit socks and sweater to wear. And of course there are pumpkins to be found everywhere. As much fun as it is to carve them, they really shine when you start to cook with them. I thought I’d share 15 of my favorite pumpkin recipes with you today. Give them a try and let me know what your favorites are.

    Pumpkin Puree
    Let’s start with something pretty basic. It’s not very good on it’s own, but we’ll use it in quite a few of the recipes that follow. Or use it in any of your own recipes that call for canned pumpkin.

    Pumpkin Soup 
    Fall is perfect soup weather and there isn’t much that’s better than a nice cup of pumpkin soup. I love the sweet and savory combination. Add a slice of homemade bread and you have a great lunch or light dinner to warm you up on a cold day.

    Pumpkin Fritters
    These pumpkin fritters make a delicious treat. They are a yummy side dish, or roll them in cinnamon sugar to enjoy as an afternoon snack or for breakfast.

    Pumpkin Pancakes 
    If you love all things pumpkin this time of the year, you have got to give these pancakes a try. They are a weekend favorite around here in the fall.

    Easy Pumpkin Pie
    It wouldn’t be fall without some delicious pumpkin pie. This recipe is as easy as it is scrumptious. If you’ve never made pie from scratch, give it a try. You can use a prepared crust or make your own using this pie crust recipe.

    Pumpkin Banana Smoothie 
    I love starting my fall days with a yummy pumpkin smoothie. The banana adds a little sweetness and creaminess to the finished drink. It’s a filling and healthy breakfast, but also makes for a great snack any time of the day.

    Creamy Pumpkin Dip 
    I love a nice pumpkin pie, but don’t always feel like baking. This dip is a quick yummy snack that gives you the same sweet pumpkin flavor without the oven.

    Pumpkin Pie Spice Mix 
    While this isn’t a recipe with pumpkin it it, it’ll be hard to make half the recipes in this post without it. That’s why I decided to include it. We love this homemade stuff around here.

    Iced Pumpkin Spice Latte 
    This is such a great lunch time treat or afternoon pick-me-up. My favorite time to fix it is right before I head out to pick my daughter up from school. I get to relax for a few minutes in the car pickup line, do a little knitting and sip on my drink. Perfect for those early fall days when you want all things pumpkin spice, but it’s still too warm for a hot coffee drink.

    Homemade Pumpkin Spice Latte 
    A list of pumpkin recipes wouldn’t be complete without everyone’s favorite fall beverage. And yes, I do include actual pumpkin in my recipe.

    Pumpkin Bread
    You’ll need a little snack to go with that PSL. How about a slice (or two) of pumpkin bread. You’ll love this nutty version. Lots of flavor and just the right amount of crunch.

    Pumpkin Dump Cake 
    Do you need a quick dessert for a Holiday Party or a Family Christmas “Get-Together”? Give this simple pumpkin dump cake a try. You can buy all the ingredients well ahead of time, then mix it all up and bake. You end up with a yummy cake without a lot of extra dishes to clean.

    Pumpkin Spice Cookies
    Wanna spice things up a little bit in the cookie jar? Try these simple pumpkin spice cookies. The raisins add just the right amount of sweetness. We love them plain, but they are also delicious with the cream cheese frosting.

    Pumpkin Bars
    These yummy bars are perfect for fall classroom parties, or as a delicious dessert any time of the year. They’re tasty, festive and not all that bad for you. Plus it’s easy to cut them into smaller or larger squares depending on how many people you’re serving.

    Simple Pumpkin Soup 
    Let’s wrap things up with one more pumpkin soup recipe. I think after pie, soup is my favorite dish to make with pumpkins. I love the savory flavor and what’s not to love about soup in the fall.

    That's it from me for this week. We've had a pretty busy and stressful couple of days and I needed something to help me relax and wind down at night. I started printing off coloring pages and am enjoying coloring them in. You can find plenty of adult coloring books at bookstores and even Walmart, but I prefer to just print off a few pages here and there. My favorites at the moment are from ColorMonthly.com
