Hi there and welcome to the next edition of the HBHW newsletter. We had a fun little vacation this past Thursday - Saturday. We drove up to my in-laws beach house and just hung out and played tourist for a few days. It was a blast and a much needed change of pace. Best of all, there was no internet connection, so no way to do any work here on HillbillyHousewife.com :) 

The Slow cooker challenge over at Homemaker'sHutch.com is going strong. We're having a blast and are loving all the great comments and feedback we're getting.

Last but not least, let's get into this week's issue of the newsletter. I'm Looking For



I’m looking fora a recipe for apple plum butter that’s made in the microwave. It has red plums and a tart apple variety .I believe it also has butter and vanilla as part of the ingredients. I liked making it in the microwave because it made it easier to fix. Does any one have this type of recipe?

Preacher Cookies

  • 2 cups sugar
  • 1/2 cup unsweetened cocoa
  • 1/2 cup milk
  • 1/2 cup margarine (1 stick) or 1/2 cup solid vegetable shortening
  • Dash salt
  • 1/4 cup peanut butter
  • 1 teaspoon vanilla
  • 2 cups rolled oats
First take out a nice 2-quart saucepan. In it combine the sugar, cocoa, milk and margarine. Cook and stir the mixture over medium heat until the margarine melts, and the sugar dissolves. Bring the pot to a boil, and reduce the heat slightly. Simmer the mixture for several minutes, until the chocolate forms a soft ball when dropped into a bowl of cold water. This is about 234° on a candy thermometer. Remove the pan from the heat when it reaches the soft ball stage. Add the salt, peanut butter and vanilla. Stir until the peanut butter is dissolved. Finally stir in the oatmeal. The mixture may seem a little runny, but will thicken up as it cools. Drop the mixture from a tablespoon onto a sheet of waxed paper. It should form medium sized cookies. Depending on the size of the cookie, you may end up with as few as 15 or as many as 24.

    Suggestions For School Lunches


    An empty lunch box can be an intimidating thing at 6 am when you are wiping the sleep from you eyes and wishing you had taken the time to prepare and program the coffee maker the night before. To help you out of this predicament, I offer the following suggestions. You can mix and match them as you see fit, creating a good combination for your crew. All the suggestions are cheap and nutritious. Some require work the day before, but many can be made quickly, even in a bleary morning fog. Some women will print this page out and keep it on their refrigerator for ideas. Other women will have their kids look it over and check or circle all of the ideas they like. Be sure to add your own ideas too.



    Suggestions For School Lunches


    Sandwiches are the backbone of box lunches. They are easy and quick to prepare in the morning, or can be prepared and packaged the night before. Variety abounds, making monotony something only to be endured by choice. Tommy is going through a stage where he only wants grilled cheese sandwiches for lunch. I fry them in the morning, wrap them in foil, and pack them in one of the side pockets of his insulated lunch bag. They seem to be a little warm at lunch, and he is satisfied with them. Sometimes there are so many variables in a child’s day that it is nice to know that lunch is predictable. I allow my children to indulge in monotony until they tire of it. Then I encourage them to explore the complex joys of variety. The following sandwich fillings include proven favorites and new adventures.

    Frugal Back To School Shopping


    It’s that time of year again… summer is almost over and the kids are heading back to school. That of course means back to school shopping. Or does it? I’m here with a couple of frugal strategies that will save you big.

    Looking at the news, magazines and what everyone is doing, you get the impression that kids need new backpacks, lunch boxes and an entire new wardrobe to start school. And don’t even get me started on the 2 page list supplies the school district sends out (also conveniently provided by your major discount and office supply stores).

    If you’re ready to get your child back to school on a dime, follow the strategies below in the order I share them. When in doubt, don’t buy right away.

    Start With What You Have

    Which brings us to my first point. Start with what you already have. Get out your child’s bag from last year along with any binders, lunch box, pencils, pens, barely used notebooks etc. Take stock of what you already have and cross that off your list of things to buy.

    Look outside your kid’s room too. For example, this past year my daughter started taking a messenger bag to school that I had sitting in the closet leftover from my college days. It’s still in good shape and she’ll continue to use it this year. The same goes for her lunch box...

    That's it from me for this week. After a couple of rainy days, I'm looking forward to spending some time in the garden today. We still have a few tomatoes , lots of cucumbers and the Okra just keeps growing and growing. There are also plenty of tabasco peppers turning red. I'm looking forward to trying my hand at making my own hot sauce. I'll let you know how that turns out.
