Cupcakes or Cake?

Hello ,

I hope you're having a nice relaxing weekend. I have my cousin visiting for the weekend (he's staying in the US for 6 months and stopped by for the weekend). I need to make this quick so we can head out for some sightseeing. Thankfully it looks like we'll have a couple of sunny and warm days.

My friend Di send me a quick Facebook message a few days ago to let me know how much she loves the new Kindle Desserts Cookbook. She got to baking right away and made the Apple Caramel Cupcakes ... except she made a cake instead of cupcakes and it turned out beautiful (and tasty). Take a look:

I thought I'd share the recipe for the cupcakes with you today. Your choice if you want to make cupcakes or a cake :)

Apple Caramel Cupcakes

1 (18.25 ounce) package spice cake mix
1 large Granny Smith apple, cored and chopped
35 caramels
1/2 cup chopped peanuts
3 eggs
1 1/3 cups water
1/3 cup vegetable oil
1/4 cup evaporatedmilk
Cupcake paper liners

Preheat oven to 350˚.

Line 24 cupcake cups with the cupcake paper liners. Place the cake mixture into a bowl, and stir in the eggs, vegetable oil and water. Beat the mixture until combined and moistened. Stir in the chopped apple and beat for 2 minutes. Fill each cupcake cup 2/3 full with the cupcake mixture.

Bake in preheated oven. Take cupcakes out when they are inserted with a toothpick, it comes out clean.

Allow cupcakes to cool on a wire cooling rack. Once the cupcakes have cooled
completely, melt caramels with the evaporated milk in a pan over low heat. Stir constantly until combined. Layer an even amount of the caramel mixture onto each cupcake and top it with chopped peanuts.
