If you ask my daughter, one of the best parts of having a mom who's a cookbook author is that the food that needs to be made to test out recipes as I develop them. She had a blast these last few months because I was working on some easy
weeknight desserts.
Yes, we had dessert pretty much every night since Easter :)
If my family is any indication, these are going to be a huge hit. Here's one of her favorites from the cookbook.
Banana Boats
- 2
bananas
- 1/4 cup miniature marshmallows
- 1/4 cup semisweet chocolate chips
Preheat the oven to 300˚.
Make a slit each banana lengthwise that goes through the peel, but not into the banana. Stuff each banana with desired amount of marshmallows and chocolate chips.
Wrap each banana in aluminum foil and bake for 5 minutes.
Of course there are plenty of other delicious
recipes in the book including some cinnamon sugar tortillas you can make in a snap, some cookies, cupcakes and cakes, cobber, fudge pie and all sorts of delicious sweet treats your family are going to love.
