Hello ,
I hope you and your family had a wonderful Easter. We spent lots of time with family. I have a bunch of little nieces and it's always fun to watch them hunt eggs in their pretty dresses. We hid over 80 plastic eggs and they found all but one. I'm sure it will turn up during
yard work :)
We also had a nice Easter Dinner with some chicken, ham and all sorts of delicious sides. We've been eating ham and eggs for breakfast the past two days, but there's still plenty leftover.
But with ham so inexpensive this time I year, I'm tempted to head to the grocery store in a bit to buy another one. It's a very versatile meat that you can turn into all sorts of different dishes.
Cook up
some ham and eggs for breakfast, fix a ham sandwich for lunch, or put it into soups, stews and casseroles for dinner.
Do you need a little inspiration? Here are a few of my favorite recipes for leftover ham.
Ham also freezes really well. If you're tired of ham for now, pack it up and throw it in the freezer for frugal meals later on this spring.
