[HBHW News] Freezing Rain, Crockpots and Eggs

Hi there and welcome to the next edition of the HBHW newsletter. We've had a crazy week around here. Lots of freezing rain, frozen roads and weird school schedule. School was closed yesterday and we've had late start days almost every day this week. It's been nice being able to sleep in a little longer, but it makes for much shorter work days for me. 

I've gotten in the habit of making a big pot of quick cooking grits for breakfast in the morning. I just fix it with a little butter and salt and let everyone add and season from there. My daughter loves to put cheese in hers, my husband adds a little bacon and I prefer mine with just a little pepper most days. Everyone is happy and it makes for a frugal breakfast that warms you up before heading out into the freezing rain.

Let's get into this week's newsletter. In this issue I have a yummy recipe for you for some breakfast burritos. They are always a big hit around here and work great if you need a grab-and-go breakfast. 

Today's article is about cooking yummy and frugal casseroles in your crock pot and the frugal tip is about recycling print paper into notepads. It was submitted by a HBHW reader and is a great tip.

Featured Recipe of the Week

Ranchos Huevos Burrito


  • 2 large eggs
  • salt and pepper to taste
  • 2 Tbsp canned black beans (or other beans you liked)
  • 1 Tbsp chunky salsa, any you like
  • 1 Tbsp shredded cheese, any you like
  • 1 whole wheat (or other healthy choice) 8″ size tortilla (warmed in oven or dry skillet if you like)
Whisk the eggs, salt and pepper together in a bowl.

Put non-stick skillet (or skillet sprayed with cooking spray) on medium heat.

Pour egg into skillet and cook, stirring occasionally, until set up, then add the black beans, stir and remove from heat.

Add salsa and shredded cheese, and fold into eggs.

Place the tortilla on a plate, add the egg mixture from skillet, and roll the tortilla up burrito style, tucking in the bottom and rolling up tightly.  Wrap in parchment paper or waxed paper to take with you.

Makes 1 good sized serving.

    DIY Notepads

    Submitted by a HBHW Reader:

    I make my own notepads by cutting copy paper sheets into the desired sized and bind them together with a rubber band.
    What’s more – I do quite a bit of printing for business purposes, and often get a bad copy of something (or those sheets the printer uses to align the printer heads), and I use all those bad “throw away” sheets to cut up into notepad paper.

    Any piece of paper that is blank on one side (not stuff with personal information like bank statements, of course) can be cut up and and bound together by a rubber band to make a notepad.

    That’s a great idea. I use all sorts of scrap paper but usually just keep it in a little basket on the counter. I love taking printer paper (and the flyers coming home from school on what seems a daily basis) , cutting them into fourth and turning them into a notepad with a rubber band.

    How to Make a Quick and Delicious Casserole in Your Crockpot

    Most casserole dishes are made in the oven in a piece of bakeware made for creating casseroles. But did you know you can also make casseroles in your crockpot? Here is a simple and delicious recipe that I have been using for years! Quick and delicious casseroles in your crockpot will not only cut down on your time in the kitchen, but it will also help save you money in the process.

     Things You’ll Need

    • 6 thick slices of cooked ham
    • 8 washed and sliced potatoes
    • 1 white onion, thinly sliced
    • 2 cups grated Cheddar cheese
    • 2 cans cream of mushroom soup

    Place two slices of ham on the bottom of the Crock Pot. Add a single layer of potatoes and a single layer of onions, and sprinkle with 1/2 cup of cheddar cheese.

    Add another two slices of ham, a layer of potatoes, a layer of onions and another 1/2 cup of cheddar cheese.

    Add the remaining ham, potatoes and onions to the Crock Pot.

    Pour the soup over the top of the ingredients. Add the rest of the cheese.

    Cover the Crock Pot. Cook on high heat for four hours or on low heat for seven hours.

    That's it from me for this week. We're doing well with our Lent habit of not eating anything sugary. It's been a week and we all realized we don't really need to snack on cookies and cake, or have sweet cereal in the mornings. I do miss a little bit of chocolate every once in a while and that's something I look forward to adding back after lent, but overall it's been a great experience so far.
