[HBHW News] One More Before Christmas?

Hello 
 
Hi there and welcome to the next edition of the HBHW newsletter. I just looked at a calendar and realized that next Wednesday is December 23rd. We're a bit in limbo at the moment and as of right now plan to stay home for Christmas which means I would have time to publish another edition next Wednesday. But that may change... we'll see. 

What do you think? Would you enjoy another edition right before Christmas Eve? Maybe a special Christmas edition with mostly inspirational stuff and maybe a few fun last minute recipes? Let me know. 

Last week, I sent out the daily advent post before the newsletter, this week, I thought I'd switch things up and finish the newsletter first. Look for the advent calendar post and the email from me about it shortly.

I'm trying to get ahead on some of my chores and things I want to do here on the Hillbilly Housewife site so I can take some extra time off around Christmas. This year my goal is to slow down, do less and enjoy family time. Our daughter is growing up so quickly, I want to create plenty of good family Christmas memories while we can. I'm sure baking cookies with mom won't be as appealing to her in another year or two.

Oatmeal Cookie Mix in a Jar


• 1 cup flour
• 1/2 cup brown sugar
• 1 tsp. cinnamon
• 3/4 cup sugar
• 1/2 tsp. nutmeg
• 1 cup raisins or chocolate chips
• 1 tsp. baking soda
• 1/2 tsp. salt
• 2 cups old-fashioned oats

In a bowl, mix flour, cinnamon, nutmeg, baking soda and salt put to the side for the time being. Now, layer remaining ingredients in order given in a one quart wide-mouth canning jar. Pack down after each addition so everything fits. Add flour mixture on top.

Instructions for tag: Pour the entire jar of cookie mix into large bowl. Mix until everything has been completely incorporated. Now, add 1 1/2 sticks of butter or 2 eggs, slightly beaten & 1 tsp. vanilla. Use your hands to make sure everything has been blended in and then roll into 1” balls. Place 2 inches apart on greased baking sheets. Bake at 350 for 11-13 minutes.

    How Fresh Are Your Eggs? 

    Sometimes recipes call for fresh eggs or older eggs. There are some things that just work out better depending on the age of your eggs.

    For example, if you’re making poached eggs, you want to make sure you’re using eggs that are as fresh as possible. If you’re making hard boiled eggs on the other hand, you don’t want them to be too fresh or it will be hard to peel them.

    How Fresh Are Your Eggs?


    Unless you get your eggs fresh from a farm, it’s hard to tell exactly how old they are. My favorite thing to do is to submerge the egg in a glass bowl in some water. A 2 cup measuring cup works great for this. Fill it with water and then gently submerge the egg.

    If the egg is fresh, it will lay on the bottom of the dish, usually flat on it’s side. If the egg is older, air bubbles start to form inside and the egg will stand upright in the water or even float to the top.

    10 Yummy Crockpot Soup Recipes

    Winter is here and that means we’re eating a lot of soup. There’s just nothing better than coming home to a nice warm pot of soup. Just whip up some biscuits to go with it, make some toast, or dust of the bread maker and start some bread when you’re starting the soup in your crockpot.

    Below you’ll find 10 of my favorite Slowcooker soup recipes. These make a regular appearance on my weekly meal plan. Not only are soups absolutely delicious, they are also quite frugal and by using your crockpot you don’t have to worry about stirring pots all day.


    #1 Crockpot Bean Soup
    • 1 lb bag or 2 cups mixed beans, soaked overnight
    • 7 C water
    • 1-2 lbs ham, cubed
    • 1-2 pressed cloves garlic
    • salt, celery salt, and pepper to taste
    • 1 small onion, chopped
    • 1 Tbsp Italian seasoning and/or Herbs de Provence

    Put all ingredients into your crockpot and cook on LOW for 8 hours.



    #2 Crockpot Ham and Potato Soup
    • 3-1/2 cups peeled, diced potatoes
    • 1/3 cup chopped celery
    • 1/3 cup finely chopped onion
    • ¾ cup diced ham
    • 3-1/4 cups water
    • 6 chicken bullion cubes
    • ½ t. salt
    • 1 t. pepper
    • 5 T. flour
    • 5 T. butter
    • 2 cups milk

    Stir all but milk, flour and butter into crockpot. Cook on low for 6-8 hours, check tenderness of potatoes. 20 minutes before serving, melt butter in a saucepan, add flour and gradually add milk, stirring constantly over med heat until thick. Stir mixture into crockpot. Let cook 15-20 minutes more.
