I hinted last week that I've been working on another crockpot cookbook for you. It's ready and full of delicious recipes using ground beef. 

I love the fact that ground beef is still fairly affordable and that it's so versatile. I did my best to capture that versatility in the latest HBHW Kindle cookbook. You'll find recipes for anything from soups and stews to tamales and even burgers in there (Yes, burgers cooked in the crockpot). Perfect for slowcooker cooking throughout the year.

Savory Beef and Bean Casserole

The bacon in this dish makes it absolutely delicious. It's a good hardy meal that will fill you up and you won't need much meat to make this work. I often set aside a little hamburger when we're cooking spaghetti or making burgers and start this casserole the next morning. 

  • 1/2 lb. ground beef
  • 1/4 lb. bacon, cut in pieces
  • 2 (16 oz.) cans pork & beans
  • 1 (16 oz.) can butter beans, drained
  • 1 (16 oz.) can kidney beans, drained
  • 1 cup ketchup
  • 1 cup onions, diced
  • 3 tbsps. brown sugar 
  • 2 tbsps. white vinegar 
  • 1 tbsp liquid smoke
  • Dash of pepper 

Brown the ground beef and bacon, drain and add to slow cooker.

Add remaining ingredients. 

Cover and cook on high for 3 hours or low for 6-8 hours.

Serves 8
