Happy Monday! Are you ready for another frugal recipe? This week I thought I'd share one of my favorite breakfast and simple weekday dessert dishes with you - Rice Pudding.
It's a great way to use up rice leftover from the night before and it's a very versatile dish. My favorite way to fix it is with raisins and maybe a dash of cinnamon, but you can eat it plain, add a little vanilla or use whatever fruit you have sitting around.
I like it for breakfast, but I also use it quite a bit for dessert if we're having a light dinner. If there isn't quite enough leftovers for a full meal for everyone for dinner, serve it and add the rice pudding as dessert. Give it a try and see if you don't like it as much as we do.
