[HBHW News] Healthy Casseroles and Being Thankful For Today

As promised, here's the next edition of the HBHW newsletter. Fall is here in full force and we've had our first frost (which is nothing compared to the snow that's been falling in parts of this beautiful country). We'll be busy working on a few last outside projects around the house this week and it's so nice to come back inside and enjoy a hot cup of coffee, tea or hot chocolate. And yes, we've been having warm, hardy casseroles for dinner most nights (even though my crockpot has a permanent spot on the counter this time of the year as well).
 
In this week's featured article I share another aspect of casserole cooking that many of us are concerned with - the health and nutrition of a casserole.  Although it's true that some casserole dishes aren't what you would consider healthy, there are ways to tweak recipes in a way that boosts the nutritional value and lowers the things we are trying to avoid, like fats and sugars, to name a few.  If you have been avoiding casserole cooking because your recipes use all prepackaged food items and soups thrown in a dish, be sure to read this interesting article.

This week's quote is about doing what you can with what you have instead of wishing you could do more.  The story is on the same lines, but it's more about enjoying what you can now, today, and not looking for more.  Please take a moment to read and enjoy.
